Mung Bean Fettuccine with Kale Pesto

Our talented chefs, Lee and Darleen Gross, have created a unique, summer favorite: Mung Bean Fettuccine with Kale Pesto. These perfectly "al dente" noodles are made from high-protein, low carbohydrate, green mung beans, dressed with a pesto of fresh summer basil and nutrient-dense kale and topped with Organic Pharmer's house-made almond-flaxseed Pharmesan and fresh arugula leaves.

Mung bean is a nutritional powerhouse rich in vitamins A, B, C and E as well as important minerals such as calcium, iron, magnesium and potassium.
