Grounded Muesli, for a clean, no sugar added, nutrient dense alternative to store bought granolas and breakfast cereals. No cooking required!
Filled with protein, fiber, healthy fats, and antioxidants, this muesli checks all the boxes for a healthy, quick weekday breakfast. It’s fast and easy; healthy and super satisfying, meaning it will keep you calm and full until lunchtime.
Spoon over Greek/nut milk yogurt; or combine with equal parts nut milk (1-1 ratio liquid to muesli) and refrigerate overnight for a boosted bowl of creamy, satisfying overnight oats. You can also add water or nut milk and heat the muesli stove top for those colder mornings when the craving for something warm and cozy hits.
In a large bowl, combine all ingredients:

2 cups rolled oats

2 cups rolled spelt

1 cup sliced almonds

1 cup walnuts, chopped

1 cup currents or golden raisins

¼ cup chopped pecans

¼ cup pumpkin seeds

¼ cup chia seeds

⅓ cup cacao nibs
-
⅓ cup gogi berries
-
⅓ cup unsweetened dried, tart cherries, chopped

⅓ cup unsweetened, chopped dried apricots, chopped

1 tbsp. of cinnamon
-
1 tsp. freshly ground cardamom (optional)
Feel free to substitute and play with ingredients for a customized blend!
Make ahead and store in a large glass mason jar to keep on hand for a fast, nutrient dense weekday breakfast.
