  2. Prepare Flax Egg: In a small bowl, combine 1 tablespoon of ground flaxseed with 3 tablespoons of water. Stir and let sit for about 5 minutes to thicken.

  3. Mix Dry Ingredients: In a medium bowl, whisk together the almond flour, all-purpose flour, baking soda, and salt. Set aside.

  4. Cream Coconut Oil and Sugars: In a large bowl, using an electric mixer, cream the softened coconut oil (or vegan butter) with the date sugar until light and fluffy, about 2-3 minutes. You may need to chill the bowl you are mixing in so the coconut oil gets the right texture.

  5. Add Flax Egg and Vanilla: Beat in the flax egg and vanilla extract until well combined. 

  6. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not over-mix.

  10. Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

  • The cookies didn’t flatten out like a cookie. I pulled them out of the oven and flattened them with a fork at about the 9 minute mark. Will see how they taste when done.
