  4. Cream Coconut Oil and Sugars: In a large bowl, using an electric mixer, cream the softened coconut oil (or vegan butter) with the date sugar until light and fluffy, about 2-3 minutes. You may need to chill the bowl you are mixing in so the coconut oil gets the right texture.

  • The cookies didn’t flatten out like a cookie. I pulled them out of the oven and flattened them with a fork at about the 9 minute mark. Will see how they taste when done.
