Recipe: Coconut Chia Pudding (Sugar-Free & Delicious!)

A creamy, nutrient-packed breakfast that’s naturally sweetened with berries and coconut without any hidden sugars

What you'll need (Serves 2)

  • ½ cup chia seeds
  • 1 ½ cups unsweetened coconut milk (or any plant-based milk)
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • ¼ tsp sea salt
  • ¼ cup unsweetened shredded coconut
  • ¼ cup chopped almonds or walnuts
  • ½ cup fresh or frozen berries (blueberries, raspberries, or strawberries)
  • Optional: 1 tbsp hemp seeds or flaxseeds for extra fiber


How to make it

1. Mix Ingredients: In a bowl or jar, whisk together chia seeds, coconut milk, vanilla extract, cinnamon, and sea salt.

2. Let it Set: Cover and refrigerate for at least 2 hours (or overnight) until it thickens into a pudding-like consistency.

3. Toast Coconut & Nuts (Optional): Lightly toast the shredded coconut and nuts in a dry pan over medium heat for 2-3 minutes until fragrant.

4. Assemble: Stir the pudding, then top with shredded coconut, nuts, and fresh berries.

5. Serve & Enjoy: Eat immediately or store in the fridge for up to 3 days.
