A zesty spiced warming soup with fresh vegetables, garbanzo beans and vine-ripened tomatoes, finished with gluten free quinoa pasta and tender spinach leaves.
Saffron, sometimes referred to as the sunshine spice due to its happiness boosting capabilities, has many other purported uses, especially in Persian traditional medicine. It has been known to be used for relieving stomach aches, kidney stones, and even to treat depression. Coupled with the other herbs in this soup and yes, even tomato, the Tunisian Tomato is a perfect soup to eat on your health journey. (Note: some people may refrain from using this soup on their healing journey if they are following an Autoimmune protocol that specific outlines removing Tomato from the diet).
INGREDIENTS: tomatoes, onion, celery, carrot, fennel, garbanzo beans, orzo pasta (quinoa flour, white rice flour, filtered water), spinach, garlic, turmeric, vegan "bone" broth (water, sweet potato, onion, celery, carrot, garlic, parsley stems, turmeric pulp, apple cider vinegar, sea salt, EVOO, fennel seed, coriander, black peppercorn, cloves, bay leaf, kombu seaweed, thyme, rosemary), spices (cumin, coriander, cinnamon, caraway, fennel seed, black pepper, bay leaf, chili flakes, saffron).

Instructions for heating: Place soup in pot on stove on medium heat for 1-3 minutes or until desired temperature is reached.
